about the harvest: Grapes are harvested at optimal ripeness.
in the cellar : The wine is made from Shiraz grapes grown on Koffieklip soils. Grapes are harvested at optimal ripeness where they are crushed and destemmed diretly into stainless steel tanks.
The grapes undergo 24 hours cold maceration before fermentation. Once fermentation starts the grapes are pumped over 3 times per day. post fermentation the grapes are left on the skins until the tannins are nice and soft then the skins are pressed and the wine undergoed ageing in barrels for 18 months in 400L barrels.
